How can a person really win in poker if they don't really know what the person is raising with unless they played with them for 5 hours? Even then the person could change what they are raising.

Well that is why the game is not so simple. Books are written on every aspect of the game. In the end it all comes down to pot odds and feel.

At the start of the game its unknown though is the confusing part for me.

Good players watch body language, betting patterns, facial expressions, previous hand outcomes, etc. Having cards in your hand is only a part of the whole game.

Easier said than done, but keep yourself out of tough decisions/spots out of position and the game is much simpler. After you get a feel for the table you can better determine which player(s) are likely to put you in tough spots.

Darren Brown taught someone who had never played poker how to read tells, and she go ahead to place 2nd in a tournament.
(of course, it could just be a show)

What can someone win per hour live at fixed limit? Is it around half a big blind if you play really well at a loose table?

I expect to win much more than half a big blind per hour. If you are a good player I'd say more like 10x big blind on a normal table. More on a loose one, but loose tables can get you too. Anything can happen in just one game.

I know some of the stuff Darren Brown does is staged; it's logical to think that the rest of it's staged as well.
