I wouldn't be surprised if a lot of kids starting college recently (which is where a lot of people get their first taste of real poker) don't know anything besides Hold'em - and probably No Limit at that.

Most are at very least aware of the other games, though many don't know the rules. Stud seems to be a foreign concept to most young people today unless they are poker enthusiasts, but let's be honest Stud is a really boring version of poker as compared to PLO/NLHE or even limit versions of those games. I mean a minority of players are going to disagree with me there, but Stud isn't really an action game and isn't all that intricate. It's just memory and drawing odds.
FWIW, I've never seen a US facing site sustain those games, but I've never played on Carbon (well I played a freeroll when I was considering using the site) or the Merge network. Maybe they do have games running, but until it's all regulated and whatnot it's a longshot IMO.
Plus there's about a hundred reasons not to support Carbon/Merge, but for whatever reason they're bigger than WPN. Better software/better word of mouth I guess.

The first game I learned is no-limit holdem in 2004. I'm 34. I rather play other games though as I got burned out on hold 'em.

There are some games I'll personally never get into even if I do wind up playing it and get a decent hit on. One prime example is Let It Ride, even if something were to possess me to play that game and I hit a progressive that one time, I still probably wouldn't play again. Why? Because I'll still remember how the other times I played it were like pulling teeth. There are some games that for me the frustrating nature of losing trumps the excitement of winning. Baccarat for me is another game that for me I could be up 500 bucks and still have half my attention diverted to another game that's got a full table that I like better. And I got to say Hold 'em is just the same grind over and over, plus it always sucks when you have decent hole cards and want to see the flop, some guy goes all in, and you know you should fold, you do, and lo and behold you'd have had a full house and the guy turns up with a pair of aces and wins. That's what I like better about 5 card draw/seven card stud.

Yeah winning $6750 at NL holdem in one day was pretty sweet I guess.
