Experiment: (Caveat: I've never tried this.) Show the roulette dealer a red chip, e.g., tell him/her it's for the boys/girls, and place it straight up on any number. Place your green chip, e.g., on the same number and the numbers on either side of that number on the wheel, i.e., a three-sector bet. Expand the sector to whatever variance-averse size that you prefer.
Results: [Please share! I know that at least one of you will try this.]
If you're gonna try it, you might have better luck asking the dealer to pick the number.
But don't expect to win. Because if the dealer really could do it, they'd have a friend come play rather than trying to help a random player.

2. Good idea! Ask the dealer for his/her lucky number!
3. If they ask a friend to play, they're both probably committing a felony. A random customer gives them a chance to practice their skills with much less risk, if any.
If you are going to ask the dealer tell them that you will also bet a chip for them on it. That will get them to at least try if they think they have that skill.
