Just got back, was expecting 200-300 off the bill, but, instead, I had my first override. Extremely pleased, except for the whole losing my max.

If you are looking for an overall rule. This doesn't happen- it actually will lead people to think the wrong things.
There are exceptions to everything and hosts can override at times- the issue is that usually you don't get the whole story and there could have been a large loss or some mitigating factor as well

Yeah, I had a huge loss (for me, less than five figures) and had more taken off my bill than I expected (was worth). Everything beyond that is conjecture. I may be wrong using the override term, but there was definitely more comped than I usually get for the amount I played (similar playing patterns and average bet taken into account).
Edit: Just want to add that I have a history of consistent play, 5-8 hours per comped night.
