So I found this YouTuber, who films craps games in Vegas through a hidden camera.

I know casinos don't allow recording for their own reasons, but isn't this illegal since its hidden? Watched the videos and nobody seems to acknowledge that there is a camera so it's definitely hidden

Maybe not illegal, but prohibited. I don’t want pictures of me at a gaming table posted on social media, but I know it might happen. For a lot of people, gambling is still judged a seedy activity and doing so a character flaw.

Video is legal in most states but audio is not. If it is a 1 party state then video and audio are legal.
You can not monetize video with peoples faces visible without their permission.

One of my guilty pleasures is watching Youtube slot videos. I find that I like the commentary, and it keeps me from playing new games myself to learn how they work.
Standards there appear to be that you can't film other patrons (they're blurred in editing when it happens) and there are copyright issues with the music in some cases. There, a public domain song is dubbed over in a fairly snarky way. Seems to me that both of those items would be bigger issues at the craps table, where other patrons are more visible and the machine noise is less able to drown out the music.
