On busy nights at MGM Grand (like, after a big event at the grand garden arena) there is usually at least one $100 minimum table. It's not usually empty (though not packed either). There may be nothing with less than a $25 minimum either.

From limited observation, time of day, day of week, and events in town have a large bearing on this question. However, I would say your best bets to see nose bleed action are Wynn and Belagio.
Let me put it this way: those are two places they won't bat an eye at black/purple action. Nor will you feel out of place playing that heavy there.

Truthfully the highest action I've seen is at Sam's Town. Almost everytime were there, there's someone their playing 20x odds (with usually purple or yellow action)
