Over at wizardofodds there's a blackjack game for practicing basic strategy. But the game description says that the cards are reshuffled after every hand. How might that effect a real session where there may be, say, six decks that are only reshuffled after the decks are used? Or should I think of the simulator only on a per-hand basis and ignore the "bankroll" total?

The odds are slightly better if a cut card is used. In the future, I may introduce a cut card option to that game, with other card counting functions.
