In the UK we have slightly different rules for blackjack.
6 decks, 60-80% penetration
Stand on all 17's
Split any pair, aces only one card, no blackjacks, can resplit aces any number of times.
Can split an unlimited number of times
Double any two card hand, even after splits
No surrender
No dealer hole card.
Question is, is this game countable? and worth the effort?
How does this game fair against Vegas Liberal Rules?

You are loosing about 0.18% on no hole card and no surrender, but gaining 0.06% on resplitting aces for the total house edge of about 0.47%.
It is better than many of the US games (particularly, those that hit soft 17 or don't allow double after split).
60% penetration isn't good, but 80% is very decent. I suspect, that you underestimated the 60% and overestimated 80%. I think, yeah, it is countable.

What count would you recommend?
I understand a basic +/-1 count, and can do six decks no problem. I also like the look of wizz's ace five count.
How do I determine my bet size, based on the count?

I prefer the Hi-Lo count for being simple enough and powerful at the same time.
Ace-five is a lot easier to track, but a little less accurate. If you are comfortable with Hi-Lo, I can't think of a reason you would want to go Ace-five, but if Hi-lo is making you sweat, then Ace-five is a good alternative.
The rule of thumb about betting is bet as low as possible (or, even better, just sit out if you can) when TC < 2, and bet 0.5% of your total bankroll for every true count unit above 1. For example, if you have $1000, and the true count is +3, bet $10 etc.
