Some particulars:
1. 6 decks, no hole card. The dealer also didn't burn the first card after a shuffle.
2. I bet 1 euro for a dealer and I split and won. The dealer took 2 euros and left the other 2 euros on the table. Apparently, the dealers can choose to just let their tips ride.
3. At some point, a man behind me put a 5 euro chip behind my bet. It took me a split second to realize what had happened, but I've heard of such thing, so I didn't make a scene.
4. I split aces, and got a ten on one of them, but the dealer pulled an ace on his ten and apparently dealer "blackjack" always beats a player's "21." It was weird, but meh, take my 3 euros.
5. I was on the second base when I surrendered my 16 against a dealer 10. I was told that next time I need to to that before the first base player makes his move.
6. The dealers seemed to be Eastern European immigrants.
Anyway, I didn't play much. I lost 200 euros ($272), but it was interesting.
Apart from allowing you to surrender, all you say sounds quite reasonable (except in the UK I've not seen that you can bet for the dealers - you have to tip directly if you want to). It is quite common to back behind. I assume you know the no-peek implies you don't split A's vs A and 8's vs A or 10; also don't double 11 vs A nor 10.

So are many of the dealers at the MGM grand.
