I'm not sure it's the case in all casinos, but at least at Mohegan, you are not allowed to split or double on coupon bets, and blackjack pays 1:1. Eugh, right? (Strictly speaking, if it's a free bet, you may not split or double at all. If it's a match bet, you can double down the real-money amount only, and you can split for the total amount of the initial bet).
Solution: put it on the player bet in Baccarat! It's a house edge of about 1%

IIRC a roulette bet on one of the near-50/50 choices is also restricted, e.g. you can bet "red" but not "black." I once had a fist full of coupons that I had to use or lose in a hurry. I was told you can only use three coupons at a table, so I had to hop from table to table.
Another good use of coupons/free-bets is either the pass or don't-pass craps line bet, then if the point is established take/lay the 5X odds at 0% HE.
