In baccarat they put the cutting card about 10-12 cards from the end
So could you not note down every card that has come out and determine what the remaining cards are and make an educated guess what the next hand will be based on the tableau of play

Except for the 2-12 cards they often burn off the front, yeah.

you are not the first one to think of this. but the consensus are card counting does not work with baccarat.

OK... around here they typically burn an unspecified number of cards off the front of the deck, and count 6 or 7 off the back to set the cut card.
So yes, you could track all the cards, and quickly break it down to see if a tie is more likely than the payout rate.
Of course, you get what... 2 shoes an hour, and most of the time the tie will not be more likely... so if you sit there for 10 hours a day, you might get 1 or 2 good opportunities. If you sit there for about three weeks, you might see one "guaranteed" tie... or, you might not.

Since baccarat is played at a relatively slow speed that is about 12 dollars every 2 hours. You will also be sitting out almost all hands specifically the tie opportunity is only about 1 in 8.5 shoes. The most made wager is banker and that is only once every 6 shoes. In total you will be betting roughly once out of every 2.5 shoes. It simply isn't a worthwhile use of time or money.
