Are there any advantages for the player to know the bottom card of a 6 Decks shoe, be it Blackjack or Spanish 21? The card is never going to be used since it's at the bottom, after the cut card, so would there be any mathematical advantage to knowing it? My casino is adamant about it being concealed, so I just want to know what their reason is if any, or if they know what they are talking about in the first place.

Yeah. There is an advantage.
The advantage of knowing ONE card out of 312 is quite miniscule - even an expert player might not be able to get much use out of that info. But mathematically, yeah, there's an advantage.

I think the real advantage is in establishing and following procedures. Even in a six deck shoe, that dealer has to protect the game. Sure the casino would be giving more away if it was a single deck hand-dealt game, but the attitudes and procedures of the casino focus on protecting whatever edge they have rather than merely not giving away a substantial part of that edge.
One ten out of 240 being at the bottom may not provide much information to many people but it provides some information and just one of those players might be a math whiz. The casino does not want to give up even a slight portion of that edge to anyone.

It is the same advantage as seeing any other card. The card counter should make the appropriate adjustment to the count based on the bottom card. Mathematically, exposing the bottom card is similar to moving the cut card one card deeper into the shoe.

For the record, when I replied, I wasn't thinking about the advantage to a card counter.
Upon re-thinking this, the advantage must be somewhat significant. After all, some casinos refuse to show the burn card(s).
