They don't care about gambling and/or gamblers. Just tourists who know not how and wish free rooms in exchange for giving up their chance to win.

Is the Cromwell still a convenient place to park? I know it was a hidden gem while it was Bills, just wondering if anything has changed

It is. Enter parking from the side street, there's a portico on the back side for valet, entry to self-parking off to the side of the same driveway.
If the House lost every hand, they wouldn't deal the game.

Of course they do! Don't you watch The Simpsons ? There's a "new" surefire way to win thousands at blackjack without getting caught!

Step 1: learn to count
Step 2: seriously, learn to count properly
Step 3: when the count is high, give the signal for your confederate at the bar to join the game and bet big
Step 4: leave before the security goons get their hands on you (no, I don't know why security didn't bother to watch all of the exits, since they have cameras pretty much everywhere)
Step 5: since they have your photos, return using disguises (no, I don't know why they just didn't go to another casino)
Step 6: under no circumstances do you let your dimwit husband have any idea where you are or what you are doing.
Step 7: if, somehow, your dimwit husband ends up being held in some casino backroom for some reason and is threatened unless the "stolen" money is returned, appeal to the casino's corporate owners (no, I don't know why they simply didn't respond, "Er, you are aware that holding him with force against his will is kidnapping, right? No, he's not trespassing, and "taking things into your own hands" earned O.J. Simpson a hefty prison sentence, so what makes you think you can get away with it?")

And why do I have the feeling that the ending of that episode (where Homer stands up for card counters and is promptly tossed out of the casino) was written by somebody who has been backed off at least once?

That is funny, from the Barbary Coast, a total dump, to the "Cramwell!!"
From $99 ! (not including their resort fee).

The only saving grace is that Drai"s is still there, (oh the joy) but I guess it's on the roof now? Only $600 for bottle service by the pool for "Nelly" Damn I'm going to miss it.

I'd be surprised if they didn't; for a while, they've been advertising themselves to be the best value on the strip, with 3:2BJ and Single-0 roulette. Last time I was there, 25$ 2D 3:2 tables were pretty much empty, while there were other tables of lower limits that were packed, though I'm not sure is they were 5, 10, or 15.
