In what manner?
BJ has 21+3 which takes your two cards and the dealers card for a 3 card poker payout.
Craps has the repeater which includes a dealer envy payout.
Im sure there are others, but, whatchatalkingabout?

Why, yes! I guess every table game sidebet in the casino technically involves a dealer! How silly of me not to have seen that earlier.

On a serious note many jackpot like bets (e.g. Blackjack, 3CP) use the Dealer's cards to allow for scenarios that are so unlikely they can offer the bigger prizes.
I think in PaiGow Tiles I've seen a sidebet on the dice roll (which picks which hand gets dealt first).
