assuming casinos take their cut, why not have a blackjack section of a poker room, or a proper blackjack room, where 7 players put in a set amount for winner take all, after a predetermined number of hands with non cash chips? i know the casino makes more money at the proper BJ tables, but they do have various poker table games AND a poker room.

There is or at least was such a game.
I believe it was called Blackjack Attack. Players put in an equal bet and played until one player remained. No doubling, no splitting.
Edgewater had it for a short time.
Russian underground casinos in Brooklyn offer it.

Very similar to a tournament. Most tournaments pay multiple places and some allow limited number of re- buy ins.

Yes, but what I'm suggesting is that it's offered all the time in a casino, and not just for the irregularly scheduled bj tournaments which happen seldomly in each casino, and are usually invite only.
