You're looking for statistical analysis to determine a house edge on both bets. I find it odd, that you care so much about the numbers, however you still make field bets. This should be pretty simple to you. The field bet is a bad bet. Don't make it.
Unless you can find a joint (other than some indian casinos) that pays triple on the 2 and triple on the 12 for a Field bet. Then it is a zero house edge bet.

The house edge on the don't pass is 1.36%, and the house edge on a short-pay field bet is 5.56%. To figure out your average house edge, do this:
(((average don't pass bet*.0136)+(average field bet*.0556))/average total bet)
Most people will bet more on the line than in the field, so I'd ballpark your house edge at about 2.5-3%.
