I think he did lose while playing Blackjack in Licence to Kill (which shouldn't really even count as a Bond movie..uuugh), but after the session he landed Talisa Soto so I guess that would count as a win afterall.

What are termed "Call Bets" but are actually "Announced Bets" are common on European roulette layouts. The player "announces" his bet which might involve several separate stacks of chips on different spots on the layout, but puts the total number of chips in ONE place on the layout. Very popular in the Ukraine these days. The French names for these bets are known so a player need only call out the name of the bet and put one stack of chips in the correct box. The croupier is relieved of the burdensome duty of breaking down the stack into half a zillion separate bets and positioning each of them properly.

Note: As to realism in the movie, that scene with a mechanic crawling over the airplane in the background was a one-third scale mockup of an airplane, so the director hired a midget to be the overalls-wearing mechanic just to gain a realistic perspective.
