How to lose customers without really trying.
A food delivery company recently held a promotional event at the park, offering samples of their wares. I was impressed enough that I thought I'd take a chance on them. After studying their menu, I placed an order on July 29th for six meals, scheduled for delivery Aug 1st or 2nd . On 2nd, I get a notification that they are running late and the box will ship on the 3rd.
The box arrived yesterday, but only three of the six meals were what I ordered. I emailed them about the problem, and they told me there is no problem. The company changes the menu monthly, and some items from July are not available. The letter stated that, typically, when an item is not available, they substitute it with a similar item I regularly order. However, since this was the first time, they sent their best sellers instead.
I explained I ordered in July off the July menu, and it wasn't my fault they didn't pick it up until August 3rd. I pointed out that the website says 98% of orders ship within 24 hours of being placed, and I don't think I should be charged for items I didn't order. They disagreed.
I filed a claim with my CC company for 50% of the items being unordered and not wanted.

It's a start-up, and the meals I had were exceptional. I received an email from the guy I was dealing with, apologizing for my dissatisfaction and passing my complaint to a committee. I was told to expect a response within 24 hours.

Since they're a startup, and they seem to be trying, I'd be inclined to forego the CC chargeback.

You've lodged your complaint. If they can't make amends satisfactorily, don't reorder. I'm just guessing you're out about $45 for the unwanted meals, but I doubt such a refund will make any meaningful difference in your finances.

I also understand that it all adds up, and you shouldn't have to pay for their mistake, but my understanding is chargebacks and disputes have an outsized negative impact on new merchant accounts, and the good folks at (StartupKitchen) may not deserve that sort of headache... if they're reasonably trying to do ok by you.
May the cards fall in your favor.

Weren't you going to be out one of those costs anyway?

If your choices are pizza ($15) or pad thai ($15), if you buy both, eat one, and discard the other, you paid $30. If you bought one and ate it, you paid $15. Your incremental cost is $15.

Maybe I'm just projecting my own decision to try not to get too ticked off over $45 of useless lunches.

I ordered three pizzas from Ciros for $30, and they don't show up. I replace them with three pizzas from Al's. My lunch now cost me $60 and I only got $30 in value. If Ciros hopes to keep my business, they must at least make me whole.

Today I will be attempting to smoke some ribeye steaks and stuffed potato skins. I am guessing about 90-120 minutes for the ribeye but being a first attempt it is just guessing. I am using cherry wood and thinking about 250 degrees.
link to original post

Are they already cut into steaks, rather than smoking it as a prime rib or standing rib roast?

(Should be interesting.)
link to original post

They were already cut into steaks about an inch thick. They did not turn out great as the texture was mushy. If I try again I will throw them on the grill and char them after smoking.

Yes need to reverse sear them if you smoke them. If you are going to be smoking, I recommend this site. Everything yet made anything from it is delicious: https://heygrillhey.com/

Eating three pizzas for lunch didn't make you whole? You always give the impression that you're pretty whole to begin with, three pizzas should only add to that wholeness. That abundance of wholeness.

Guys

35 minutes is what I've set to nuke and make congee.

Live and learn...

How to make congee in microwave oven Per Google

"Rinse the Rice:

Rinse the rice under cold water until the water runs mostly clear.

Drain well.

Combine Ingredients:

Add the rice and 2½ to 3 cups of water/broth to the microwave-safe bowl.

Add a pinch of salt if using.

First Cook – High Power:

Microwave uncovered on high for 10 minutes.

Watch closely in case it starts to foam or boil over.

Stir and Cover Loosely:

Stir the rice to break up clumps.

Cover loosely with a microwave-safe lid or plate (leave a small gap for steam).

Second Cook – Medium or Medium-Low Power:

Microwave on medium or medium-low (50-60% power) for 20–30 minutes, stirring every 10 minutes.

Adjust time depending on how soft and thick you want your congee.

Final Texture Check:

Stir and check the texture. Add hot water or broth to thin it if needed.

Microwave another 5 minutes if the rice is still too firm.

Serve:

Serve hot with toppings like shredded chicken, century egg, scallions, sesame oil, soy sauce, etc.

🔁 Tips:
Use a large bowl! Congee foams and can overflow easily.

Stirring every 10 minutes helps prevent clumping and sticking.

Leftovers can be stored and reheated with extra water."

Nah, I had the chicken & broccoli from another stall.
Even when I could eat like that, I couldn't eat like that.

Ashly ate the whole platter by herself.

A whole lobster, half pound of crab legs, half pound of shrimp, half pound of clams, sausage, eggs, potatoes, and corn.

All dressed in a spicy butter garlic sauce. I tasted the sauce, it was good - not overpowering the way Old Bay can be.

They weigh alll the seafood in the shells so it doesn't really amount to all that much weight. It sounds like a lot of food but it's really not.

I smoked some pork chops and mac&cheese. The pork chops were rather thin and I slightly overcooked them in 35 minutes a 225. The mac&cheese came out with a nice smoked flavor.

Tomorrow, if the weather cooperates, the wife and I will be trying the new food truck park that opened. I believe they currently have ten food trucks operating.

I cooked the thickest ribeye steak I've ever tried.
After letting it maranade in a solution of my own making- teriaki sauce, maple syrup and a few secret ingredients all afternoon,
I broiled it on high for four minutes on one side, then three on the other. Tossed it into a heated frying pan for two minutes on each side to get a nice sear, then added blue cheese crumbles and some parmesan cheese before heading back to the boiler for another minute. The result was a fantastic piece of meat you could pull apart with just a fork, and the grilled mushrooms just added to the perfection. I'm my own harshest critic, but this meal came off problem-free. The only thing missing was a buttered roll and some cole slaw- both of which I'm abstaining from for four more days.

I'm still settling in to my new house, so I'm not back on my "usual schedule," but today it's a cup of cereal (Blueberry Bran Crunch - kinda skimpy on the blueberries, though, especially compared to the same company's Special K with Blueberries) for breakfast, some chili cheese fries for lunch, and half of a pork tenderloin (I had the other half on Thursday) for dinner

Zucchini noodles with homemade marinara sauce and chicken. If you let the marinara sauce sit on low heat for at least 3 hours it gets really thick and really good. I made enough for 3 days.

It was corn for the midnight snack in the backyard zoo last night, a mother and her baby raccoon and a young male deer. Look how cute the baby is. Mother raccoons will typically stay with their young for the first year teaching them how to take care of themselves. Raccoons are extremely intelligent and they have actual hands like we do and they pick things up with them and eat. 100 years ago they tried using raccoons as test animals in the pharmaceutical business but it didn't work because they kept escaping they kept figuring things out. And they're so big and fat it cost a fortune to keep them fed. So they started using mice and rats.

That might work with the poor people in Africa but it would never work here. So called poor people in the United States are way too sophisticated ever to eat plain rice. It doesn't taste like anything, in fact without seasoning it's terrible. No no no, the so-called poor people here they want pizza and fried chicken and hamburgers.

That to me is not plain rice, that is processed rice. Rice is the cheapest source of calories but brown rice is only a little more expensive and has more nutrition and flavor.

I am partial to the black Japonica rice.

I LOV this tasty new salad

Per Google:

🥔 Potato Purée Salad Recipe
Ingredients:
4 medium potatoes (Yukon Gold or Russet), peeled and cut into chunks

2–3 tbsp butter

½ cup milk or cream (adjust to desired creaminess)

Salt & pepper to taste

1 tbsp olive oil or mayonnaise (optional for creaminess)

2 tbsp chopped fresh herbs (parsley, chives, dill, etc.)

1 small red onion or scallion, finely chopped

1–2 boiled eggs, chopped (optional)

1 small pickle or gherkin, diced (optional)

½ cup cooked peas or chopped cooked carrots (optional for color and texture)

Instructions:
Boil the potatoes
Place potato chunks in a pot with cold salted water. Bring to a boil and cook until very soft (about 15–20 minutes). Drain well.

Mash or purée
While hot, mash the potatoes with butter and milk (or cream). For a very smooth texture, use a potato ricer or hand mixer.

Season
Add salt, pepper, and optional olive oil or mayo for a smoother, richer salad.

Cool slightly
Let the mash cool down to room temperature. This helps it blend better with salad-style ingredients.

Mix in add-ins
Stir in chopped onion/scallion, herbs, and any optional extras like peas, eggs, or pickles.

Chill
Refrigerate for 30 minutes to 1 hour if you want it cold, or serve at room temperature.

Garnish and serve
Top with extra herbs, a drizzle of olive oil, or a sprinkle of paprika.

I got an email early last week saying they were looking into it. On Friday, I got a notification from my CCC saying a $27 refund was issued and today I got an apology and a 25% off coupon.
Somehow, these are billed as groceries and are tax-free, whereas Omaha Steaks collects sales tax on its product as does every restaurant I know.

I am going to Italy next month and been making some dining plans. We have hired an outside chef to come to the villa and fix a few special meals. One of the options on the list was grilled horse chops. I had no idea that people in Europe still ate horse. I was shocked and looked it up and it is not uncommon in southern Italy.

My Irish cousins were shocked New Yorkers ate so many dogs. They thought it was barbaric, and were intrigued that American Buffalo had wings.
