non tipping concepts and what the link is talking about.....

The restaurant business model is warped: kitchen wages are too low to hire cooks, while diners are put in charge of paying the waitstaff. So what happens if you eliminate tipping, raise menu prices, and redistribute the wealth? New York restaurant maverick Danny Meyer is about to find out.

I'm not a business person or whatever, but AFAIK, isn't being in the restaurant business (i.e.: owner) extremely difficult and most new restaurants fail within the first 6 months or 1 year or so? Maybe they fail because people don't like the food (I kinda doubt this).....seems like they fail because it's simply difficult to make a profit as a restaurant.

That being said.....I can't imagine a typical restaurant be able to survive if they increase wages (to $15-20/hour) while increasing food prices and decline from diners tipping.

I think your failure number is about right. Failure probably comes from all sorts of reasons. It is a tricky business, and demanding "living wages" be paid is not going to do anything but shut more start-ups out. People are not going to want to pay $15 for a meal at McDonald's and $28 at Applebees.

Restaurants do pay low, but the skill level is low. The kitchen is often a place where people with a spotty background can find work. As Mr. White said, waitressing is the #1 place a non-educated female can make a living, reason being because of their tips.

For some reason, a certain part of our population just does not want the next McDonald's or Draden to be founded.

Joe's Crab shack tried the no tipping policy and after a few months switched back.Tipping id entrenched in U.S.I don't think it will ever go away.
The mountain is tall but grass grows on top of the mountain.

it would require state law to ban tipping for a no tipping restaurant to survive.
