I have 2 Free Play coupons for $200 each. The rules for use are:
All $200 must be bet at once.
Even money bets only.
If it wins, I get $200 in chips, and the coupon is taken.
A push gets to play again, and a loss is a loss.

I don't count cards, so BJ would be a crap shoot. ;-)
I could play Pai Gow Poker, at 2.66% HA.
I could try a couple of hands of baccarat, betting on Bank for 1.06% HA

Or I can play Pass or Don't Pass on a craps table.
Pass line at 1.4% HA
Don't Pass line at 1.3% HA

I'm not sure if I am allowed to take odds on this line bet, but if I did, $100 would likely be all I would put down.

If I was to play Doey-Don't I virtually guarantee myself a $200 win. There is the 1/36 chance of the push 12, followed with a natural or a made point, which would lose both bets, but I like the odds of that not happening.

So, should I take the almost certain $200 from doey-dont, or should I play the two Free plays straight up on another game, and if so, what game would you play?

almost certain $200? if the shooter passes you win the pass line and lose the don't pass, right? not following this, maybe something to do with free play? [edit: I think I get it now] ... doesnt seem like the casino could be so dumb as to guarantee you $200.

btw I hyper-ed a wincraps doey-don't with no odds for 100,000,000 trials, about 30,000,000 come out rolls, and the HA was exactly -.1.41%. I think this shows that the problem with it is you put 2 units up against the HE instead of one, for no advantage in taking odds.

What's the fine print say?

Usually it restricts the bet not only to even money, but only certain bets to prevent you from doing what you're suggesting.

I.E. Usually they don't let you bet on both Black and Red. That the same almost virtual win as the Doey/Don't....

If it allows the Doey/Don't, I say go for it.

Sorry, poor wording. What I am doing is taking $400 in free offers, and hoping to guarantee I can change that into $200 in chips. Casinos used to give you the chips to play with, but I guess too many folks took the chips and cashed it, so now they want it put in play. Plus, this effectively cuts their offer in half. If they gave me $200 in chips, and I won, I would have $400. This way, if I win a $200 Free play bet, I have $200 in chips.
I don't see restrictions on the coupon for the doey-don't, but I see another probable issue. One Free play is good for April, and the other for May. I am there April 30- May 2, but I bet I must use the April play that first day, so that eliminates the doey dont scheme.

Be a real gambler, throw it on the field. In all reality they probably won't allow it - but the worst thing that could happen is someone comes up and tells you to not be a douchebag and put them in real play.

Sure, put it on the doey-don't and take your guaranteed money, if they allow it. Don't forget to put a couple bucks on the 12 unless you want to take that 1/36 chance of walking away with nothing.* You could also try red/black on roulette with a couple bucks on the split (not as good as craps, obviously).
Do they have baccarat? You will get the highest return with a player/banker split. Guaranteed payoff of either $200 or $190, so an average $195 return. That's what I would do if I had two high value coupons like you do.
The Grosjean paper somebody linked to says 3-card poker is the best game to play to maximize value of coupons but if you are going for the guaranteed $ baccarat is the best. The paper also states that the best bet for a coupon on baccarat (single bet) is PLAYER. This is counter-intuitive, but he explains it well.
