Bottled cocktails are supposedly trendy and fast.
A pillar of champagne glasses gives people an opportunity to interact (or spill them) when selecting a glass.
Its sort of a "dark cabaret" in a restaurant with adult gymnasts and adult dancers with hoola hoops.
