Does anyone know or anticipate whether or not the books will be open later than normal the day before the Super Bowl? I'm getting into town at around midnight, which is later than any books I know of are open.

No idea, but you could just place a bet the day of the game. I think kickoff is at 3:17 LV time.

Apologies, I should have qualified the question by saying that I need to drive to CA immediately after landing and won't be in town on Sunday itself.

Take a cab to the Hard Rock. I believe it is the closest casino to the airport, and the sports book is open until at very least after the late-NBA games are finished. But I would call first.
